Kanegae

Fukuoka, Kyushu

Kanegae is a rice polishing and storage company based in Yame, Fukuoka, in Kyushu. Founded in the 1930s as a food wholesaler, the company began polishing rice as part of its operations and gradually made it its core focus. In the 2000s, Kanegae built a state-of-the-art facility in Fukuoka, strengthening its commitment to delivering quality rice.

Rice polishing may sound simple, but it is essential to preserving flavor, texture, and safety. Raw rice, known as “genmai” or brown rice, must be carefully stored for up to a year until the next harvest. Temperature and humidity are precisely controlled to prevent cracking while avoiding mold. Rice is also evaluated, selected, and even graded starting with farming and going through polishing to achieve the highest quality. Advanced polishing technologies, expert analysis, and refined packaging ensure consistency and high quality at every stage.

Working closely with farmers all over Kyushu, Kanegae diligently completes this last stage to produce delicious Kyushu rice. 

Why Kanegae Rice

Japanese rice is delicious. What is often overlooked is how delicious it is, simply as a bowl of plain white rice.

In recent years, rice prices in Japan have risen significantly. While part of this reflects renewed global interest and increased tourism, it also creates a more complex landscape at home. Higher prices can place pressure on everyday consumers, yet they also offer long-awaited stability for farmers who have struggled with stagnant returns for decades.

Even if we are one small drop, we believe it is important to think carefully about our role within that balance. We cannot just say we are so tiny that we don't matter. If we are to share Japanese rice beyond Japan, we try to do so thoughtfully.

Other than our love of rice, our role as a Japanese ingredients company, and our desire to satisfy our customers, we aim to buy rice as directly as possible at fair prices. The more directly we can buy, the more farmers can make. This is just how rice is sold in Japan.

Kanegae works with farmers across every prefecture in Kyushu and has long supported the growth of Kyushu rice. Kanegae also contracts directly with farmers so they have a guaranteed route to market at fair prices.

Kyushu Rice

Over the past several years, Kyushu has grown in reputation for rice. The region’s warm climate and long rice-growing seasons have shaped a distinctive character, supported by producers who are deeply connected to their land. Fukuoka prefecture is now a major producer of Yamada Nishiki, the cherished varietal for making sake, and Kyushu sake is gaining recognition.

Kyushu’s farmland remains pristine, even as warmer temperatures subtly shift Japan’s rice-growing patterns. Typhoons from the south sometimes bring challenges, but their seasonal rains have long been part of the rhythm of cultivation. Farmers continue to grow rice with care and resilience.

Rice in Kyushu is not only a staple crop but also central to the region’s food culture, from everyday meals to traditional brewing. Together, the land, climate, and dedication of growers give Kyushu rice its enduring appeal.

Aso Shirakawa Koshihikari

Mount Aso in Kumamoto is an active volcano with one of the world’s largest calderas, a vast basin about 15 miles across. Over thousands of years, it has filled with lakes, rivers, grasslands, and fertile farmland. Volcanic rock breaks down into mineral rich soil containing potassium, magnesium, and iron. These nutrients help rice grow strong stalks and flavorful grains. Aso is known as the Land of Water because rain and snow filter through volcanic rock and emerge as pure springs.

This Koshihikari is grown with the famed Shirakawa Spring water, selected as one of Japan’s 100 Best Waters. The high altitude basin brings cool nights and crisp mornings, slowing ripening and allowing nutrients to concentrate in each grain. The result is rice with deep umami, gentle sweetness, fragrance, and a soft, fluffy texture. These qualities make Koshihikari one of Japan’s most celebrated varietals.
