Under the master’s precise temperature control, shaded leaves are slowly dried with gentle radiant heat, retaining their vibrant green color while enhancing natural sweetness and umami. The matcha’s characteristic Ooi-ka aroma, a subtle fragrance developed through shading, is complemented by savory notes reminiscent of seaweed and the delicate depth of dashi broth.

This deliberate focus on quality and tradition over efficiency produces a ceremonial-grade matcha that is smooth, rich, and almost free of bitterness.
