Standard soy sauce is made using soybean meal, which is crushed and defatted to reduce fermentation time. The flavor is also thin and simple. “Marudaizu” means "whole soy beans" which take longer to break down in fermentation. The bean's natural oils and flavors are released and utilized, producing a flavorful and umami-rich profile. 

What's Special

Founded in 1827 on the southern coast of the Uto Penninsula in Kumamoto, Kyushu, Matsuai has been working with local farmers for decades on growing organic soy beans, rice, and wheat. Matsuai Foods contracts with local farmers who don’t use pesticides or chemical fertilizers. The salt is sun dried and all ingredients are Non-GMO. This shoyu is aged for a minimum of one year before pressing. It is recommended for a variety of dishes, including sushi, sashimi, oshitashi, and simmered foods. 

Serving and Use

Matsuai Marudaizu Soy Sauce is delicious. It is perfect for sushi and sashimi because it enhances the flavor of raw fish with its umami. It can also be used for cooking because of its rich flavor.
