Tsushima is an archipelago of one hundred large and small tight-knit islands halfway between Kyushu, Japan, and Busan, South Korea. Despite its small population of 30,000 and its remote location, Tsushima has a beautiful and varied geography of forest and coast, unique wildlife, deep history, and an ecosystem based on sustainability. The Tsushima horse, a sturdy pony, is the island’s mascot. The mountain cat has its own museum.
In 2018, after training under his father for decades, Yujiro Oishi, the second generation, began leading the family’s farming and tea making. He has focused his craft exclusively on the production of “koucha,” Japanese black tea.
What's Special
The only cultivar the Oishi's grow is “bennifuki,” which is known for its complexity and aroma. Oishi farm also started planting Yuzu trees near their tea fields in the 1990’s. This tea is a product of both of their efforts. Dried yuzu peels are added to this black tea to impart a delightful, fruity element. It enhances the fruity, complex flavor of the bennifuki cultivar.
Serving and Use
Put one tablespoon in a tea pot, add 6-8 cups of hot water, steep for one minute, and enjoy. You can use this tea three times. It is best enjoyed on its own.
