Strawberry Matcha Tiramisu

Ingredients:

Strawberry Sauce

  • 1 lb strawberries, plus 5–6 strawberries for the bottom of the dish

  • 1/3 cup sugar

  • 1 tbsp cornstarch

  • 1 tbsp raspberry powder (optional, for a bolder color)

  • Zest of 1 lemon

Strawberry Cream

  • 16 oz mascarpone

  • 1 cup heavy cream

  • 4 egg yolks

  • 1/2 cup granulated sugar

  • 1/3 cup Marsala

  • 1/4 tsp salt

  • Strawberry sauce

Matcha Soak

Strawberry Sauce Directions

  1. Add all the strawberry sauce ingredients to a blender and blend until smooth.

  2. Pour the mixture into a saucepan and cook over medium heat, stirring frequently, until thickened, about 5–8 minutes.

  3. Pour the strawberry sauce into a metal bowl. Place the bowl over an ice bath and allow the sauce to cool completely before using.

Matcha Soak Directions

  1. Combine the matcha with 1/2 cup of hot water and whisk until smooth.

  2. Pour the mixture into a bowl, then add the remaining 1 1/2 cups of water and the strawberry liqueur. Stir to combine and set aside.

Strawberry Cream Directions

  1. Whip the heavy cream to soft peaks and set aside.

  2. Place the mascarpone in a medium bowl and set aside.

  3. In the bowl of a stand mixer, whisk together the egg yolks, salt, sugar, and Marsala. Place the bowl over a double boiler and whisk constantly until the mixture reaches 165°F (74°C).

  4. Transfer the bowl back to the stand mixer and whip on high speed until the mixture is pale and thick, and the bottom of the bowl no longer feels warm.

  5. Turn off the mixer, add the cooled strawberry sauce, and mix until thoroughly combined.

  6. Gently fold the strawberry-egg yolk mixture into the mascarpone until just combined.

  7. Gently fold the whipped cream into the mascarpone mixture until no streaks remain.

Strawberry Matcha Tiramisu Assembly

  1. Slice the reserved strawberries and arrange them around the bottom of an 8 × 10-inch dish.

  2. Dip the ladyfingers into the matcha soak, making sure not to oversaturate them. Layer them across the bottom of the dish.

  3. Add half of the strawberry cream and spread it evenly over the ladyfingers.

  4. Dust the top with matcha powder, then repeat the layering process with another layer of dipped ladyfingers and the remaining strawberry cream.

  5. Refrigerate for a few hours, or until fully chilled and set, before serving. Enjoy!

Optional Decoration

Place parchment paper flower stencils directly on top of the tiramisu before adding the final layer of matcha. Carefully peel the stencils away to reveal a fun flower design.
